Item type:Publication, Association between dairy meat quality with gender, slaughter age, and marbling score, and relationships among the meat quality traits(2023-05-01) ;Sinthusamran, S. ;Sivapirunthep, P. ;Kaesang, T. ;Supphakitchanon, T.Tuntivisoottikul, K.Gender of dairy cattle did not influence all studied traits (P>0.05). Age at slaughter did not influence the most meat traits, except L* value (P<0.05). Meat from the oldest animals, 5 yr old, exhibited significantly lower L* value than the younger animals, 2, and 3 yr old (P<0.05). Marbling score significantly affected traits (P<0.05), except pH, a* and b* color values (P>0.05). The muscle obtained higher marbling scores had more dry matter and ether extracted (intramuscular fat content). Increased marbling score was related to decrease shear force. The lightness of muscle with the highest marbling score had the highest mean L* =52.8. There was strongly positive correlated between %DM and %EE (r= 0.91, P<0.01). The positive relationships between %EE, and L* and b* were found. Shear force was positively correlated with cooking loss (P<0.01), but it was negatively related to L* (P<0.01). - Some of the metrics are blocked by yourconsent settings
Item type:Publication, Oxidative stability of Iresine herbstii extract-containing coconut oil during storage(2023-01-01) ;Sai-Ut, S. ;Senphan, T. ;Pongsetkul, J. ;Kaewthong, P.Tuntivisoottikul, K.Virgin coconut oil was used as green solvent for the extraction of total phenolics from I. herbstii (I. herbstii: coconut oil, 1:10 (w/w)). I. herbstii extract-containing coconut oil (ECC) had dark red in color. Acid value (AV), peroxide value (PV), thiobarbituric acid-reactive substances (TBARS), ρ-anisidine value and volatile compounds were taken as parameters for evaluation of oxidative stability of EEC sample. All parameters of EEC sample were lowered, in comparison with the control sample during storage for 7 weeks. ECC sample produced less TBARS value than the control (p<0.05). Abundance of volatile compounds in all samples correlated well with the TBARS value. Results revealed the use of coconut oil as green solvent for extraction of bioactive compounds and natural red pigment from I. herbstii, where I. herbstii as antioxidant to prevent lipid oxidation in vegetable oil. - Some of the metrics are blocked by yourconsent settings
Item type:Publication, The effects of genetic groups, and age on the chemical composition, physical properties, and somatic cell count of raw buffalo milk(2022-07-01) ;Mettamehtar, K. ;Tuntivisoottikul, K.Takeungwongtrakul, S.The genetic groups of the buffaloes influenced all the chemical compositional traits (P<0.05), and some physical properties, such as the percentage of citric acid content, and the milk urea nitrogen concentration (P<0.01). Milk from Swamp buffaloes had the highest percentage of fat content (11.1%) compared to purebred Murrah (7.9%) and 75%Murrah crossbreeds (8.2%), but it was not statistically different from the 50% Murrah crossbreeds (9.5%). Similar results were found in the percentages of protein, solid-not-fat, and total solids content. The purebred Murrah showed the highest average lactose content (4.9%), but it did not statistically differ from those of the 50% Murrah crossbreeds (4.6%) and Swamp buffalo (4.5%). The highest citric acid content was found in the Swamp buffaloes (0.20%), while the lowest of the trait was observed in the 100%Murrah. The Swamp buffaloes and the 50% Murrah crossbreeds had higher averages of urea concentration than the 100% Murrah and the 75% Murrah crossbreeds. The age of the animals in different genetic groups did not affect most of the studied traits (P>0.05), except the percentage of milk fat content, the percentage of citric acid and the percentage of urea concentration (P<0.05). The 50%Murrah crossbreeds and Swamp buffaloes which were older than 9 years old which had higher averages of fat content than the other groups. The highest citric acid content average was found in the 50%Murrah crossbreeds which were older than 9 years old, and the highest urea concentration average was detected in milk from the 50% Murrah crossbreeds which were younger than 7 years old. - Some of the metrics are blocked by yourconsent settings
Item type:Publication, Ribeye areas and sizes of fattening culled dairy carcasses determination using plastic grid and geometric methods(2022-03-01) ;Tuntivisoottikul, K. ;Pomasa, P.Sivapirunthep, P.The ribeye areas (REA) of fattening culled dairy carcasses which measured using geometric method (GM) were significantly higher than those using plastic grid (PG) method with the averages of 84.12 and 81.42 sq.cm., respectively (p<0.01). The factor of ribeye sizes had highly significantly influenced on REA. The averages of REA for small, medium, and large sizes were 61.94, 80.85, and 105.51 sq.cm., respectively (p<0.01). In addition, the interaction between the fators of method and size affected on the REA. The averages REA of large size measured by GM method was 108.77 sq.cm higher than that measured by PG method 102.26 sq.cm. (p<0.05), whereas there was not significant difference for the small and medium sizes measured by both methods. - Some of the metrics are blocked by yourconsent settings
Item type:Publication, Milk fatty acid profile in different genetic groups and age of buffaloes(2021-11-01) ;Mettamehtar, K. ;Tuntivisoottikul, K.Takeungwongtrakul, S.Thirty-seven fatty acids were identified in 40 buffalo milk samples. Nineteen of the totals identified fatty acids were found in all samples. Sixteen fatty acids were detected in some samples. -Linolenic acid (C18:3n6) and cis-11,14,17-eicosatrienoic acid (C20:3n3) were not found in buffalo milk. Milk from 50% Murrah crossbreds had the highest content of C6:0, C8:0, C10:0, C12:0, C14:0, C16:0, and C18:1n9t (p<0.05). There were no significant differences in the averages of docosahexaenoic acid (C22:6n3) contents between 100% Murrah and 50% Murrah crossbreds. Averages of SFA and total fatty acids in 50% Murrah crossbreds were higher than those of the 100% Murrah. The factor of age within different genetic groups affected six fatty acids such as C6:0, C8:0, C10:0, C12:0, C16:0, and C22:6n3 (p<0.05). The traits in 50% Murrah crossbreds which were younger than 7 years old and older than 9 years old were higher than those in others, except for C6:0 and C22:6n3, in which the 50% Murrah, that were older than 9 years old were the highest. With regards to the Murrah purebreds, no significant differences in the traits of the different studied ages were noticed. The factor also affected the SFA and total fatty acids contents (p<0.05) but did not influence MUFA and PUFA (p>0.05). - Some of the metrics are blocked by yourconsent settings
Item type:Publication, Yield grading and prediction of combined closely trimmed and semi-boneless lean percentage using carcass traits of fattening culled dairy cattle in Thailand(2021-09-01) ;Sivapirunthep, P.Tuntivisoottikul, K.The percentages of combined closely trimmed and semi-boneless lean of fattening culled dairy carcass were classified into five yield grades, 1 through 5. Yield grade 1 carcasses had the highest semi-boneless lean percentage more than 81 % and yield grade 5, the lowest percentagde which combined in closely trimmed semi-boneless lean was less than 68. A significant regression equation was found (F = 13.321, p < 0.05), with an R<sup>2</sup> of 0.305. The equation for predicting the combined in closely trimmed and semi-boneless lean percentage of fattening culled dairy carcass is combined in closely trimmed and semi-boneless lean percentage was 81.523 – 0.851 (marbling score, 1-5) – 1.209 (rib fat thickness, cm.) – 0.097 (chest cavity width, cm.) + 0.060 (rib-eye area, square cm.) + 1.302 (sex, 0=male, 1=female). - Some of the metrics are blocked by yourconsent settings
Item type:Publication, Gender, age, farm, and slaughter month factors affecting dairy carcass traits and the relationship between the traits, thoracic cavity depth, and carcass length(2020-12-01) ;Thawonwat, R. ;Sivapirunthep, P. ;Kongpiboon, W.Tuntivisoottikul, K.Farm affected most traits, except for the thoracic cavity depth (TCD), skin weight (SKW) and percentage of skin weight (PSK). Slaughter month had affected all the traits, except for PSK. The relational study, findings showed that the final live weight had highly significant positive correlated with all studied traits (P<0.01), except for TCD and PSK. Hot carcass weight had highly significant positive correlated with dressing percentage of carcass length (CL) and SKW (P<0.01), except for PSK. Dressing percentage did not correlate with TCD and CL. However, the negative correlation between TCD and CL (r = -0.325) was found, whereas the TCD had no correlation with SKW and PKW. However, CL had negative correlation with PSK (r=-0.287), while the relationship between SKW and PSK was 0.586. - Some of the metrics are blocked by yourconsent settings
Item type:Publication, Effect of sex, age and final live mass on carcass traits of fattening dairy cattle(2020-01-01) ;Moomak, P.Tuntivisoottikul, K.Most animals (63.25 %) obtained a marbling score of 2 while 19.27 % obtained a score of 1. Marbling score was not affected by all the studied factors (P>0.05). Sex had a significantly stronger effect on hot and chilled carcass mass (P<0.01): averages for both hot and chilled carcass masses of males were greater than those of females. All studied traits (P<0.05), except chilling loss (P>0.05), were influenced by age. Averages of both hot and chilled carcass mass, both in kg and in proportion of animals with 3 yrs age were higher, but not statistically different from those of 4 yrs animals. Most traits were significantly affected by final live mass (P<0.01). As the final live mass increased, both hot and chilled carcass mass in kg and as a fraction increased, and chilling loss both in kg and as a fraction decreased. - Some of the metrics are blocked by yourconsent settings
Item type:Publication, Influence of sex, age, slaughter mass and source farm on carcass composition of fattening dairy cattle(2020-01-01) ;Phonkhokkong, P.Tuntivisoottikul, K.Sex significantly influenced total tendons mass and percentage of tendons mass (P<0.01). The factor had also significantly affected to total mass, total lean meat mass and total bone mass (P<0.05). Age influenced total bone mass, total fat mass, percentage of bone and muscle:fat ratio (P<0.05) and proportion of fat (P<0.01). Chilled carcass mass, total mass of lean meat, bone, fat, and tendons were highly significantly affected by slaughter mass (P<0.01), which also significantly influenced percentage of fat (P<0.05). Cattle with a slaughter mass more than 650 kg had higher averages of chilled carcass mass, total lean meat, bone, fat, and tendon mass and percentage of fat than lighter animals. The factor of source farm significantly effected chilled carcass mass and total fat mass (P<0.01), as well as total mass of lean meat and bone and percentages of bone and of fat (P<0.05). - Some of the metrics are blocked by yourconsent settings
Item type:Publication, Paternity testing of crossbred beef cattle with 15 microsatellite markers(2019-01-01) ;Tuntivisoottikul, K.Chaosap, C.Alleles from only 9 microsatellites were detected as BM1818, BM1824, BM2113, CSSM66, ETH10, ETH225, INRA023, INRA037, and INRA063. The highest number of alleles (23 alleles) was found in CSSM66, while the lowest number (13 alleles) was found in ETH 10. BM1818 had expressed an allele size between 239 to 316 bp, while the smallest sizes, 129 to 179 bp, were detected in BM2113. Twenty-nine pairs of sire-offspring obtained a positive LOD score, whereas B-066 with Carlos-sire obtained a negative LOD score. It meant the 29 pairs of sire-offspring were matched with the pedigree records. These 9 microstellites could be used for paternity testing.
