V.Amylose content is an important indicator that determines the hardness and softness of rice, which depends on rice varieties. Three types of specialty colored rice in Vietnam were selected for research on instant rice production including DH6 brown rice (DH6), Huyet Rong rice (HR), and Cam Cai Lay rice (CL). Proximate compositions and antioxidant properties such as total anthocyanin and total phenolic content in three kinds of rice were analyzed and compared. In addition, the effect of varieties and ratios of rice and water on the cooking time, volume expansion, antioxidant compounds and sensory properties were observed. The results showed that varieties led to differences in the nutritional profile of rice. CL and HR have the highest anthocyanin content (54.9-56.5 mg/100 g). DH6 brown rice is considered as the low amylose rice, with the content of amylose about 4.6%. Besides, it was also found that using “Cam Cai Lay” rice could create products with good structure and high sensory value. The results also confirmed that the product is of good quality when using a ratio of rice: water 1:2 and a cooking time of 30 mins. Types of rice and cooking conditions remarkably affected the quality of instant rice, which could further optimize for the up-scale process. - Some of the metrics are blocked by yourconsent settings
Item type:Publication, Non-linear viscoelastic behavior of cooked white, brown, and germinated brown Thai jasmine rice by large deformation relaxation test(2017-07-03) ;Sirisomboon, Panmanas ;Kaewsorn, Kannapot ;Thanimkarn, SatthawatPhetpan, KittisakStress relaxation tests at high strain were conducted on scoops of cooked white, brown, and germinated brown Thai jasmine rice using a King Mongkut’s Institute of Technology Ladkrabang test rig. The diameter of the scoop was 35 mm and the height was 10 mm. Non-linear modeling, consisting of four relaxation models, was applied to the data obtained for each type of rice. The modeling methods included Peleg and Normand’s; Yadav, Roopa, and Bhattacharya’s; Jaya and Durance’s; and Myhan, Markowski, and Daszkiewicz’s. The cooked white rice showed greater tenderness compared to the others. The toughness of the three types of cooked rice was not found to be different. The Myhan et al. model was the most accurate in describing the non-linear viscoelastic behavior of all types of cooked rice. The cooked brown rice showed the highest initial decay rate, but the lowest relaxation, lowest elasticity, and greatest viscosity. Item type:Publication, Development of UV-treated cooked germinated brown rice and effect of UV-C treatment on its storability, GABA content, and quality(2016-09-01) ;Jongyingcharoen, Jiraporn SripinyowanichCheevitsopon, EkkapongA process for preparing UV-treated cooked germinated brown rice (CGBR) was developed. The UV-C exposure time was varied to study its effect on the shelf life of CGBR at room temperature (RT; 25 ± 2 °C). The germinated brown rice with the highest GABA content was cooked and radiated with UV-C for 30 and 60 min, after which the aerobic plate count was reduced by 0.40 and 0.58 log CFU/g, respectively. Their shelf lives were 1 and 3 days, respectively. The GABA contents of control CGBR, 60-UV-CGBR, and canned CGBR were 7.49, 5.11, and 1.81 mg/100 g dry matter, respectively. The whiteness and hardness of 60-UV-CGBR were not significantly different from those of control CGBR (p ≥ 0.05). These quality attributes were poorer after canning. After storing 60-UV-CGBR at RT for 3 days, the GABA content and whiteness decreased, and the hardness increased significantly. Its quality was however better than that of canned CGBR.
