The aims of this investigation were to quantify the important phytochemicals and antioxidant activity in three varieties of colored rice for production of parboiled rice and to determine the effects of harvest time on phytochemicals and antioxidant activity in parboiled rice. Three colored rice varieties were planted in a split plot design with four replications. Main-plot was three rice varieties and sub-plot consisted four harvesting dates including 15, 20, 25 and 30 days after anthesis (DAA). Sangyod had the highest total phenolic content (77.34 mg GAE/100g), and harvest at 15 DAA provided the highest phenolic content (63.53 and 109.47 mg GAE/100g in brown and parboiled rice). Riceberry had the highest anthocyanin (65.91 mg/g seed), and harvest at immature stages gave the highest anthocyanin content. Riceberry also had the highest GABA content and harvest at 15 DAA had the highest GABA content. Harvesting time of 15 DAA had the highest antioxidant activities. Parboiling increased total phenolic content in Riceberry and Tubtin Chumphae and increased GABA content in all rice varieties, yet reduced anthocyanin content. - Some of the metrics are blocked by yourconsent settings

This study aimed to elucidate their anxiety-liked effects, their effects on the reproductive organs, and the molecular mechanism behind any anxiety-liked effects in intact adult male Wistar rats. These phytoestrogens are of interest due to their posited health benefits, particularly for female, but with some effect on males as well. This study comprised two experiments: (1) Male Wistar rats received either a vehicle, daidzein, or genistein (0.25, 0.50, or 1.00 mg/kg) by subcutaneously injection for four weeks. They were then tested for anxiety-liked behaviors. Then, the brain monoamines in anxiolytic rats were determined; (2) The modulation of gamma aminobutyric acid receptors by phytoestrogens was further analyzed by administration of diazepam to phytoestrogen-treated rats before behavioral tests. In the first experiment, the biological parameters measured, including body weight, daily food intake and reproductive organ weights were unaffected by either genistein or daidzein. However, anxiolytic-like effect was observed in the low-dose daidzein (0.25 mg/kg) group. Higher doses of daidzein or genistein of all doses had no effect. Further, the low-dose daidzein did not alter brain monoamine levels. In the second experiment, the anxiolytic-like behavior of daidzein-treated rats receiving diazepam did not differ from that of the rats treated with just diazepam or just daidzein. In conclusion, 4-week exposure to daidzein or genistein had no negative effects on the reproductive organs, body weight, food intake, anxiogenic-like behavior, or monoaminergic and diazepam-modulated GABAergic neurotransmissions of intact male rats. However, beneficial anxiolytic-like effects were apparent after low-dose treatment with daidzein. - Some of the metrics are blocked by yourconsent settings
Item type:Publication, Germinated Brown Rice Preparation for Value Added Material for Healthy Brewed Vinegar(2022-01-01) ;Sriphochanart, Wiramsri ;Krusong, Warawut ;Surayot, Utoomporn ;Mekkerdchoo, OrachornSriprom, PongsertSoaking grains in water during the preparation of germinated brown rice (GBR) can result in the multiplication of bacterial contaminants. To address this problem, a system was designed to automatically change the soaking water every 6 h. A significant reduction of the contaminants was observed. GBR was saccharified by mold bran Amylomyces rouxii. The 5 day saccharified GBR that contained the highest α-amylase and glucoamylase activities was further used for alcohol fermentation by yeast Saccharomyces cerevisiae. Then, acetic acid was produced by Acetobacter aceti through a semi-continuous process. In the evaluation of the nutritional quality during processing, significant increments in the levels of γ-aminobutyric acid (GABA), antioxidant activities (DPPH), and total phenolic contents were found during soaking, but these levels progressively decreased in wine and were lowest in vinegar. Moreover, the soaking period from 36 h to 48 h had no significant effect on these substances. GC-MS analysis indicated that four important volatile organic compounds in the produced wine and vinegar were reported for their antimicrobial activity. Furthermore, no change in GABA was found in the vinegar over 6 months of storage. Thus, using this method could successfully produce brewed vinegar with health benefits from GBR. - Some of the metrics are blocked by yourconsent settings
Item type:Publication, Towards direct analysis of solid and liquid samples exploiting a 3D printed dialysis unit and sequential injection: Application for automated derivatization and determination of gamma-aminobutyric acid in foodstuff and beverages(2020-02-08) ;Kasetsoontorn, BhoonnarasaChoengchan, NathawutIn this work, a new design of a dialysis unit for direct analysis of solid and liquid samples is presented. The homemade unit was constructed using a 3D printer due to its simple and fast fabrication ability. The dialysis unit is composed of cylindrical-shaped donor and acceptor chambers. A stainless steel sieve is installed inside the donor chamber. SEM images clearly showed that the sieve prevented membrane blockage by suspension particles in the sample. Multiple dialysis units were connected to a sequential injection (SI) system for serial determination of gamma-aminobutyric acid (GABA) in solid and liquid samples. The dialysate from each dialysis unit was consecutively aspirated into the SI flow line for on-line derivatization of GABA with 2-hydroxy-1-naphthaldehyde (3.0% w/v). The derivative was detected spectrophotometrically at 425 nm. The linear calibration range extended to 1000 mg L<sup>−1</sup> GABA (r<sup>2</sup> > 0.99) with high precision (1.2 %RSD). The developed system was applied to analysis of dietary supplements, grains of germinated brown rice and milk. The samples were directly introduced into the donor chamber either as powder or liquids. The measured GABA content using the developed method was compared using high performance liquid chromatography, with good agreement using Pearson's correlation (r<sup>2</sup> = 0.9999). The method has high accuracy based on recovery studies (99.8 ± 1.5%) and high sample throughput (64 samples h<sup>−1</sup>). - Some of the metrics are blocked by yourconsent settings
Item type:Publication, The effect of germination on GABA content, chemical composition, total phenolics content and antioxidant capacity of Thai waxy paddy rice(2010-09-01) ;Maisont, SuchadaNarkrugsa, WoatthichaiThe changes were studied in the GABA content (gamma aminobutyric acid), chemical composition, total phenolics content and antioxidant capacity from the germination process of Thai waxy paddy rice (RD6). The paddy rice was soaked to about 33% wet basis moisture content and then germinated in the cabinet incubator (28-30°C) for 0, 12, 24, 36, 48 and 60 h. Embryos were cut to determine the GABA content, and the germinated paddy rice was dried at 50°C using a tray dryer, dehusked and ground for analysis. It was found that the germination process significantly (p<0.05) increased GABA, dietary fiber, total phenolics content and antioxidant capacity, while the fat, protein, starch and amylose content trended to decrease slightly. There was little change in the early stage of germination and then a marked increase after 36 h. For the GABA content after soaking, it gradually increased from 80 to 220 mg/100 g embryo fresh weight from 12 to 60 h. Based on the results, germinated paddy rice can be considered as an alternative source of GABA and of dietary fiber content with high total phenolics content and high antioxidant capacity.
