Abstract

The permittivity properties that are dielectric constant and dielectric loss factor of five different total soluble solid sugar solution were measured with an open-ended coaxial-line probe and a network analyzer from 950 to 2650 MHz. The transmission coefficient sending through this sugar solution was also measured over the same frequency. The relationship between the transmission coefficient and the permittivity properties was studied. The high correlation between transmission coefficient and permittivity properties was found with the highest R2= 0.70 for dielectric loss factor. The negative linear relationship between transmission coefficient and dielectric loss factor was shown with the predicted regression equation corresponding to the different total soluble solid. This study can confirm the use of microwave transmission or free space technique to identify the sweetness of the solution such as sugar solution or juice.
