Abstract
Coconut sugar is considered as a healthy sugar, since it contains high mineral contents and low in glycémie index. Usually the sugar is available in a soft paste or hard block form, which makes it difficult to use conveniently. In this study the attempt was made to convert coconut sugar into a powder form by using spray drying technique. The effects of processing parameters including coconut sugar concentration, drying air temperature and the use of maltodextrin were investigated and modeled to describe the powder characteristics (moisture content, density, powder yield, solubility, hygroscopicity). The drying experimental trials were done based on three levels Box-Behnken design. The study showed that the most significant parameters for spray drying of coconut sugar were its concentration and drying air temperature respectively. The selected optimum condition for spray drying should use coconut sugar concentration at 35-37% mixed with 20-24% maltodextrin and drying at 200°C of air temperature to obtain the desirable powder characteristics of coconut sugar.
