Effect of passive modified atmosphere storage incorporated with 1-MCP on quality of asparagus spears during cold storage
The purpose of this work was to determine the effects of 1-methycyclopropane (1-MCP) incorporated with passive modified atmosphere packaging on quality of asparagus during stored at 4°C. Weight loss, texture, fiber, total ascorbic acid and total sugar content of the asparagus packed in polyethylene bag (PE), treated with 1 ppb 1-MCP (MC) and treated with 1 ppb 1-MCP incorporated with contained in PE bag (MP) were monitored. The result shows that the use of PE bag prevented the loss of fresh weight of asparagus. The use of 1-MCP and 1-MCP incorporated with PE delayed the loss of firmness. The fiber content of the asparagus increased during storage. There was no significant difference in fiber content of each treatment during storage. The use of 1-MCP incorporated with PE delayed the loss of ascorbic acid content rather than other treatments. The use of PE, 1-MCP and 1-MCP incorporated with PE delayed the reduction of total sugar content when compared to the control. These results suggest that the use of 1-MCP incorporated with PE is a good alternative delaying the loss of fresh weight and total ascorbic acid content of asparagus spears.

This article presents an analysis of 2.45 GHz microwave (MW) distribution for ready-tocook fresh-cut asparagus in polypropylene (PP) packaging. Pre-packed asparagus was simulated for cooking process inside a domestic microwave oven with size of 30×30×20 cm (w × l × h). The MW process simulation applied finite integral method and Maxwell equations to solve an E-field inside microwave cavity. The E-field was further converted into temperature mapping based on heat transfer equations. Validation was performed by comparing the simulated and actual temperatures of MW asparagus captured on thermal imaging camera. Then heat distribution by modified microwavable packaging for asparagus was studied. The result indicates that the simulated temperature mapping of asparagus on a regular PP packaging agreed with the thermal images. The temperature distribution of asparagus was not uniform within a range between 76.8 and 28.2°C. From simulation, the modified microwavable package with dielectric loss, ε, of 16 (similar to ε of asparagus) improved heating uniformity and reduced mean temperature difference between hot and cold spots by 9.5°C compared to ε of 0.41 (regular PP packaging). This work provided guidelines to modify the MW cooking conditions and the microwavable packaging with minimal experimental cost for ready-to-cook foods.

Asparagus fields in Nong Ngu Lauem village, Nakhon Pathom province, Thailand, were surveyed for the cultural practices adopted, yield, fertilizer use, nutrient accumulation in soils, and nitrate-nitrogen concentration of the underground water. In this village, asparagus is being cultivated under contract farming with a Japanese agribusiness company and 60% of the product is exported to Japan. Average application rates of nitrogen- and phosphorus-fertilizers were 840 kg N and 286 kg P ha−1 year−1, and less than 5% of the applied elements was recovered in the harvested products. Phosphorus accumulated in the surface 20 cm soil significantly, unlike N determined by the Kjeldahl method. Higher concentration of nitrate-nitrogen was detected down to 1-m depth in the asparagus fields compared with the adjacent sugarcane fields. Underground water samples were taken from 15 wells of the village and their content of nitrate-nitrogen was determined once a month during a period of 18 months. Nitrate-nitrogen was distributed unevenly among the wells, and no periodic peaks in the concentrations were detected. The highest value of 39 g nitrate-nitrogen m−3 was recorded. © 2004 Taylor & Francis Group, LLC.
