    Melatonin immersion improves postharvest quality and antioxidant capacity of ‘Nam Dok Mai’ mangoes during storage at ambient temperature

    Importance of the work: Quality loss and delays in ripening in mangoes were explored based on melatonin (MT) immersion as a natural, effective postharvest treatment under ambient conditions. Objectives: To evaluate MT efficacy in preserving the quality, delaying ripening and enhancing oxidative stress resistance in mangoes under ambient storage. Materials and Methods: The mangoes were immersed in water (control) or in a solution of 0.5 mM MT for 1 hr and thereafter stored at room temperature for 10 days. Results: Mangoes treated with 0.5 mM MT had nearly 17% and 60% lower respiration rates and ethylene production, respectively, than untreated ones at the climacteric peak during storage, contributing to a slower ripening process and delayed progression of both peel and pulp coloration. In terms of internal quality, MT application effectively slowed the decline in firmness, suppressed the rise in the total soluble solids-to-titratable acidity ratio. In addition, the MT-treated fruits had enhanced antioxidant defense, as shown by elevated activities of superoxide dismutase, catalase and ascorbate peroxidase. These responses were accompanied by significantly lower levels of hydrogen peroxide, malondialdehyde and lipoxygenase activity, suggesting reduced oxidative membrane damage. Collectively, these findings demonstrated that MT immersion contributed to better quality preservation and improved resistance to postharvest deterioration and disease through modulation of oxidative stress and antioxidant metabolism. Main finding: Subjecting mangoes to postharvest MT treatment was a feasible approach to preserve their postharvest quality and to stimulate antioxidant capability.

    Mathematical and artificial neural network modeling for describing the infrared drying process of Moringa oleifera leaves and evaluation of product quality

    Moringa oleifera leaves were used in the infrared drying method for powder production. The moisture ratio datasets during drying at different temperatures were fitted with eight thin-layer drying kinetics and analyzed by an artificial neural network (ANN). The goodness of fit was evaluated using the value of the coefficient of determination (R<sup>2</sup>), the chi-square (χ<sup>2</sup>), and the root mean square error (RMSE). Results indicated that drying time was between 40 and 95 min at a temperature of 55 to 70 °C. Among the mathematical drying models used, the Wang and Singh model best described the drying kinetics of Moringa leaves. But comparing with the ANN model—a machine learning-based model—it showed higher prediction capacity than the mathematical model did. For Moringa leaves dried at temperatures between 55 and 70 °C, the R<sup>2</sup>, χ<sup>2</sup>, and RMSE values for this model ranged from 97.85 to 99.59%, 0.0007 to 0.0029, and 0.0228 to 0.0503, respectively. Effective moisture diffusivity (D<inf>eff</inf>) values varied between 1.908 × 10<sup>−11</sup> and 3.875 × 10<sup>−11</sup> m<sup>2</sup>/s, with an activation energy of 43.92 kJ/mol. The drying temperature also influenced the bioactive compounds in Moringa leaves. The vibrant color of the powder was produced by drying Moringa leaves at 65 °C for 50 min. The powder had 5.85% moisture, 31.97% protein, 61.05 mg/100 g β-carotene, 62.82 mg QE/g total flavonoid content, and 1789.65 mg/100 g calcium content.

    Dataset of air cargo supply chain conditions and fruit quality evolution: Case study of mango shipment from Thailand to France

    This study presents a detailed dataset collected during the international transport of mangoes (Mangifera indica L. cv. ‘Nam Dok Mai Si-Thong’) within a fully loaded Unit Load Device (ULD). The ULD contained 148 boxes (14 mangoes/box) and 31 boxes were instrumented by data loggers to monitor air and mango temperatures, as well as air humidity along the shipment. Measurements were recorded every 5 min throughout the 86.2 hour journey from Bangkok (Thailand) to Paris (France), it included cold storage, refrigerated transport, airport warehouse, air transport, and final delivery to the FRISE-INRAE laboratory in Paris suburban. At reception (Day 3), all boxes were stored at two temperatures (16 °C and 21 °C) over 15 days during which mango quality was assessed. Key quality attributes such as mass loss, peel color, pH, sugar content, and visual appearance were evaluated at Day 3, Day 6, Day 9, and Day 15 to highlight the impact of storage conditions on fruit quality. It is to be noticed that the same quality assessment was undertaken after harvest and before the cold storage in Thailand (Day 0). The dataset comprises raw and processed data files that include the temperature and humidity changes over time, as well as the quality evolution. These data are stored in series of txt files, with raw values and processed results i.e. min, max, average values, standard deviation and variance to facilitate future analysis. Additionally, the dataset includes series of jpeg files of mango images at different assessment days. This dataset is valuable for both practical and research purposes. For fruit exporters, it offers the insights into how different positions within a ULD can affect mango quality during a long-distance transport and implements certain measures to minimize quality degradation. For researchers, the dataset provides a base for numerical models validation, such as simplified thermal models and Computational Fluid Dynamics simulations. The international supply chain dataset is rare because of the complexity and the cost of implementation.

    Near-infrared hyperspectral imaging for predicting the quality of SO2 pre-treated and dehydrated mango

    Prediction for quality indices of SO<inf>2</inf> pre-treated and dehydrated mango was accessed by NIR-HSI. Models for predicting TSS and SO<inf>2</inf> content achieved R = 0.82; RMSEP = 2.42% and R = 0.83; RMSEP = 56.40 mg/kg, respectively. Visualization of TSS and SO<inf>2</inf> content could be presented by predictive images.

    Pre-storage anoxia treatment induces physicochemical characteristics of ‘Sucrier’ bananas (Musa AA group) in response to postharvest cold storage and subsequent ambient temperature

    The rapid ripening and senescence are the main problems of ‘Surcrier’ bananas during marketing. This study examined the impact of a short-term anoxia treatment on the physicochemical characteristics of ‘Sucrier’ bananas during refrigeration (15 °C), followed by exposure to 25 °C for 2 days. The anoxia treatment delayed the increases in the weight loss, and pulp-to-peel ratio as well as the pulp softening during refrigeration and after shifting to 25 °C compared to the untreated bananas. Moreover, at the end of refrigeration, the yellow color value (YCV) was 0.149 for control and 0.122 for anoxia-treated fruits. Meanwhile, on day 21+2, the YCV values increased to 0.246 for control and 0.275 for anoxia-treated fruits. Electrolyte leakage, malondialdehyde, and hydrogen peroxide levels were found to be reduced by the increased capacity of 2,2-diphenyl-2-picrylhydrazyl (DPPH) scavenging in the peel. This suggests that anoxia treatment may be able to mitigate physiological damage and senescent spotting in ‘Sucrier’ bananas during cold storage and subsequent ambient temperature. The total soluble solids (TSS) content in control fruit increased from 5.25 % to 22.00 % after storage, while anoxia-treated fruit exhibited an increase in TSS content to 18.67 %, resulting in a delay in fruit ripening. In addition, the investigation revealed that the treatment of anoxia improved the antioxidant capacity of banana pulp by augmenting the total phenolic content and DPPH scavenging in the pulp. According to the results of this study, it is most beneficial to employ anoxic treatment prior to storage in terms of both fruit ripening and quality considerations.

    The improvement of germination method for producing the germinated brown rice using a water spraying system with a revolved sieve

    Water soaking is an important method in germinated brown rice (GBR) production that causes fermentation, leading to an unpleasant smell of GBR. In this research, a water spraying system with a revolved sieve is applied to produce the GBR. The increased speed and time of spray break led to higher moisture content and water absorption. The spray break of 30 min and revolved speed of 15 rpm provided the shortest time to obtain the paddy with a moisture content of 30% (w.b.). The incubation pattern with a revolved sieve and water spray provided the shortest incubation time for 90% germination. When producing the GBR with a water spraying system with a revolved sieve (GBR-WSSRS), it had a lower number of microorganisms compared to the GBR with a water soaking (GBR-WS), leading to higher scores of overall acceptability. However, the GBR-WSSRS had a lower GABA content than the GBR-WS.

    Varieties and cooking conditions difference in quality of instant brown rice

    Amylose content is an important indicator that determines the hardness and softness of rice, which depends on rice varieties. Three types of specialty colored rice in Vietnam were selected for research on instant rice production including DH6 brown rice (DH6), Huyet Rong rice (HR), and Cam Cai Lay rice (CL). Proximate compositions and antioxidant properties such as total anthocyanin and total phenolic content in three kinds of rice were analyzed and compared. In addition, the effect of varieties and ratios of rice and water on the cooking time, volume expansion, antioxidant compounds and sensory properties were observed. The results showed that varieties led to differences in the nutritional profile of rice. CL and HR have the highest anthocyanin content (54.9-56.5 mg/100 g). DH6 brown rice is considered as the low amylose rice, with the content of amylose about 4.6%. Besides, it was also found that using “Cam Cai Lay” rice could create products with good structure and high sensory value. The results also confirmed that the product is of good quality when using a ratio of rice: water 1:2 and a cooking time of 30 mins. Types of rice and cooking conditions remarkably affected the quality of instant rice, which could further optimize for the up-scale process.

    Development of seasoning powder from foam-mat dried Artemia franciscana biomass

    Seasoning powder was commonly produced from meat or poultry. In this research, it was produced from foam mat– dried Artemia powder with the addition of various spices. Six mixing formulas were created with Artemia powder ratios ranging from 60% to 35% (from A1 to A6) along with other spice ingredients such as sugar, salt, pepper powder, shallots powder, and monosodium glutamate (MSG) and analyzed for quality and sensory characteristics. The results showed that the highest protein content was achieved in sample A1 (48.3%) and the lowest in sample A6 (28.2%). Sample A5 (ratio of Artemia powder/sugar/salt/pepper powder/onion powder/MSG is 40:26:24:2:3:5) achieved the highest sensory score, followed by sample A4 (ratio of Artemia powder/sugar/salt/pepper/onion powder/ MSG is 45:23:22:2:3:5). The remaining samples (A1, A2, A3, and A6) had lower sensory scores. Microstructural image analysis (from scanning electron microscope) of sample A5 showed good uniformity, high nutritional value, especially high protein content (about 3.06–3.48 times) compared to other existing seasoning powder products on the market, and very good water-binding capacity.

    Quality characteristics of three varieties of banana as affected by calcium carbide induced ripening

    Calcium carbide (CaC<inf>2</inf>) use remains a commercial approach to inducing banana ripening but data on the impact of CaC<inf>2</inf> application on banana quality is limited. The purpose of this study was to determine the quality characteristics of three banana varieties (Musa AAB, Musa AAA, Musa AA) during ripening. The three varieties were treated with 3.07 g/kg of CaC<inf>2</inf> and allowed to ripen. The treated samples and their respective controls were selected at the fully ripe and overripe stages and tested for some physicochemical and nutritional properties. The CaC<inf>2</inf> treatment significantly (p < 0.05) increased the acceptability of the bananas, as determined by the total soluble solids/titratable acid (TSS/TA) ratio, at both the fully ripe and overripe stages, of all varieties. The total change in peel and pulp colour (∆E) were not significantly (p ≥ 0.05) affected. CaC<inf>2</inf> also did not significantly (p ≥ 0.05) affect the starch content at both stages for all bananas, but the total sugar content was significantly affected (p < 0.05) at the overripe stage. The total carotenoids for all cultivars were significantly (p < 0.05) reduced as a result of the CaC<inf>2</inf> treatment but the total flavonoids and antioxidant activity (FRAP) were only significantly (p < 0.05) affected at the overripe and fully ripe stages, respectively. The total phenolic content and antioxidant activity (DPPH) were not significantly (p ≥ 0.05) affected by the CaC<inf>2</inf> treatment. Overall, the varieties responded largely in the same way to the treatment. CaC<inf>2</inf>, therefore, has some effect on the qualities of banana and this should be considered when choosing a treatment for banana ripening.

    Smartphone-based imaging colorimetric assay for monitoring the quality of curcumin in turmeric powder

    This research developed a colorimetric assay for semi-quantitative curcumin detection. The screening test was performed using a ferric chloride to form a brownish color which was further used to evaluate the amount of curcumin in the turmeric powder samples. The quantitative assay was performed based on the color intensity of the curcumin target using a smartphone digital image colorimetry with a developed lightbox constructed with a white light-emitting diodes (LED) light source as the measurement device. Images in red, green, and blue (RGB) color were processed to obtain relevant colors from the image and the color values were used to analyze curcumin concentrations. The intensity of the ΔB was correlated to the concentration of curcumin with high sensitivity. The method showed a linear range between 0.25 and 5 mg L<sup>−1</sup> with the LOD and LOQ of 0.12 and 0.41 mg L<sup>−1</sup>, respectively. Sample analysis was carried out in turmeric powders. Curcumin in turmeric powder samples was simply extracted using acetonitrile followed by dilution 100 times for sample preparation. The accuracy was tested by spiking 0.25, 1.00, and 4.00 mg L<sup>−1</sup> of standard curcumin into the turmeric sample solution. The average percentage recoveries were acceptable in all samples (90–104%). The method was validated by comparing the results obtained from the proposed method and high-performance liquid chromatography (HPLC). There was no statistically significant difference between the two methods (P = 0.05). Graphical Abstract: (Figure presented.).
