Item type:Publication, Effect of different aging methods and periods on physical and chemical beef qualities from Longissimus thoracis(2026-05-01); ;Paitheanchai, W. ;Prachom, N.; The results showed that the aging method and aging period significantly (p<0.05) affected aging loss, trimming loss, and cooking loss. Aging loss and trimming loss of DA and DB beef were higher than those of WV and WS beef (p<0.05). However, cooking loss in WV and WS beef was higher than DA and DB beef. No significant differences (p>0.05) were observed among aging methods in pH, colour (L*, a*, and b*), Warner-Bratzler shear force (WBSF), lipid oxidation (TBARS). Prolonged aging time (up to 4 weeks) resulted in more tender meat, while lipid oxidation increased (p<0.05). Additionally, beef colour changed significantly with increasing aging time (p<0.05). There were not different in percentage of fat, dry matter, ash, or moisture among aging method. However, DA and AB beef showed higher percentage of protein than WV and WS beef (p<0.05). These findings can be applied to develop for beef industry, particularly small-scale beef retailers and restaurants businesses, could be enhance value of premium grade beef in Thailand. - Some of the metrics are blocked by yourconsent settings
Item type:Publication, The reproductive performances of murrah and swamp buffaloes in Thailand(2021-07-01); ; ;Hengtrakunsin, RanchuanThe aimed of this research was to study reproductive performances of Murrah and swamp buffaloes. The data of reproductive performances were collected from 98 buffaloes during period 2001 to 2013 on Murrah farm is located in Chachoengsoa province, Thailand were analyzed to study the effects of difference buffalo types on service per conception, age at calving, calf birth weight and calving interval. The service per conception was significantly (P<0.05) influenced by buffalo type only in 1<sup>st</sup> parity. Additionally, the service per conception and calving interval were reduced by the number of parity increase. The age at first calving of buffaloes in swamp buffalo type was significantly (P<0.05) higher than that of Murrah buffalo (4.16±0.89, 3.79±0.50 years). In case of calf birth weight at all parity, Murrah buffalo was lower than swamp buffalo and non-significant, except 2<sup>nd</sup> parity. - Some of the metrics are blocked by yourconsent settings
Item type:Publication, A nonintrusive beef grading evaluation based on marbling fat imaging by using K-Means Clustering Technique(2024-03-01); ; ; Jirasuwankul, N.An alternative technique of beef quality assessment and grading was proposed using image analysis based on the K-means clustering algorithm as a semi-automated and nonintrusive approach. An input image of the rib-eye meat area was converted into L*a*b* color space, followed by classifying groups of features over the spatial domain. By performing a search and cluster, iterating the features of the target image in a*b* axes resulted in several distinct image zones categorized by different K-groups of features. Marbling fat was estimated in conjunction with quality assessment as an arbitrary grading system. Experimental testing on both synthetic and real image data suggested accuracy better than 95% of averaged. As comparison to conventional methods, this technique is nonintrusive, nondestructive, fast and economic for application and implementation as a measuring tool in the meat research industry. - Some of the metrics are blocked by yourconsent settings
Item type:Publication, Production of polyclonal antibodies against calpastatin gene domain I from skeletal muscle of the Kamphaeng Saen beef breed(2007-07-01); ;Kanthapanit, Chainarong ;Wajjwalku, WorawidhSethakul, JutaratCalpastatin is an endogenous inhibitor of the calpain (EC.3.4.22.17, Ca<sup>+</sup>-dependent cysteine proteinase) proteolytic enzyme system, which plays a major role in the postmortem tenderization. Complementary strand DNA of calpastatin gene derived from domain I of Longissimus dorsi muscle from Kamphaeng Saen beef breed was amplified using the 1AF_1DR primer. Analysis of PCR results indicated the presence of product of approximately 402 bp. Nucleotide sequencing of the cDNA for bovine calpastatin corresponded with published domain I of calpastatin nucleotide sequences from bovine skeletal muscle and bovine heart calpastatin in Genbank (accession no. L14450 and NM_174003, respectively). PCR products were cloned into the plasmid pDrive cloning vector and subcloned into the plasmid pET28a expression vector. Recombinant calpastatin corresponding to domain I had the size approximately 21 kDa. The recombinant calpastatin used as immunogens applied to an immunized rabbit. Polyclonal antibodies, were raised in the rabbit against recombinant calpastatin, specifically recognized the calpastatin protein of approximately 130 kDa as determined by the Western immunoblot analysis. These results indicated that calpastatin domain I was presented within the recombinant calpastatin protein and direct subcutaneous of immunization of recombinant calpastatin into rabbit was effective in polyclonal antibodies production against calpastatin. - Some of the metrics are blocked by yourconsent settings
Item type:Publication, Stock Identification of Short Mackerel (Rastrelliger brachysoma) in the Upper and Middle Gulf of Thailand by Morphological Characters(2024-10-26); ; ;Thotsagotphairee, Chayanin; Rastrelliger brachysoma, a short mackerel, is a significant pelagic fish that is common in the fisheries in the Gulf of Thailand. The management of fish stocks is a prerequisite for fish conservation strategies and profitable fisheries. Morphological character differences between stocks of species provide a method for identifying fish stocks. This study was aimed to identify stock population of short mackerel in the Upper and Middle Gulf of Thailand. The fish specimens were collected from four different locations: Chonburi and Prachuap Khiri Khan (central provinces of Thailand), Chumphon and Surat Thani (southern provinces of Thailand). Twelve morphometric characters of fish were assessed to determine the stock populations by stepwise discriminant analysis. The results showed that 12 morphometric characters were significantly different among the four populations. In the discriminant function analysis, the first function explained 61.30% of total variations, whereas the 2<sup>nd</sup> and 3<sup>rd</sup> functions were 26.50% and 12.20%, respectively. The characters included total length, standard length, folk length, head length, post – orbital length, pre – dorsal length, pre – pelvic length, 1<sup>st</sup> dorsal to 2<sup>nd</sup> dorsal length, pelvic to anal length, pre – anal length, head depth, and greatest depth, all of which can be used to differentiate these populations. According to the results of the discriminant analysis, the populations of short mackerel were predicted and subsequently classified with an accuracy rate of 54.88%. - Some of the metrics are blocked by yourconsent settings
Item type:Publication, Meat quality, post-mortem proteolytic enzymes, and myosin heavy chain isoforms of different Thai native cattle muscles(2021-09-01); ; ;Sitthigripong, Ronachai; Maduae, SabaipornObjective: This study investigated the meat quality characteristics, endogenous proteolytic enzymes, collagen content, and myosin heavy chain (MyHC) isoforms of different muscles of Thai native cattle (TNC). Methods: Infraspinatus (IF), Longissimus thoracis (LT), and Supraspinatus (SS) muscles were obtained from two TNC breeds, Kho-Lan (KL, n = 7) and Kho-Isaan (KI, n = 7). The muscle and meat characteristics of TNC breeds and their relationship with MyHC expression were examined. Results: Three MyHC isoforms namely MyHC I, MyHC IIa, and MyHC IIx were detected in the muscles. The KL had higher (p<0.05) MyHC IIx than the KI. The IF muscle had higher (p<0.05) MyHC I compared to other muscles. The LT muscle had the least MyHC I. The LT had higher (p<0.05) MyHC IIx than the IF and SS muscles. The IF presented the least MyHC IIx. The KL had higher (p<0.05) lightness and moisture content and lower crude protein, redness, cooking loss, shear force, and calpastatin than the KI. The glycogen, total collagen, soluble collagen, crude protein, ash contents, and troponin T degradation product of IF and SS were lower (p<0.05) than that of LT. Ether extract in LT was lower (p<0.05) than that of IF and SS. The percentage of MyHC I, MyHC IIa, and MyHC IIx were significantly correlated with muscle and meat characteristics of TNC. Conclusion: These results suggest that the differences in the MyHC isoforms may partly account for the variation in meat quality between breeds and among muscles of TNC. - Some of the metrics are blocked by yourconsent settings
Item type:Publication, Stock identification of short mackerel (Rastrelliger brachysoma) in Thai waters based on truss network system(2023-07-01) ;Thotsagotphairee, C.; ; ; Thongpradub, W.The results of discriminant function analysis (DFA) indicated the first two discriminant function (DF1 and DF2) accounted for 42.6% and 25.3%, respectively. The result of the stepwise discriminant function analysis revealed 16 characters from truss network system. Different characters of the DF1 were observed in head-related characters (1-17), anterior part of the body (2-3), posterior part of body (4-5, 15-16), and caudal trait (9-12). The DF2 showed the different characters in anterior part of the body (3-16), posterior part of body (5-16), and caudal trait (6-15, 6-14). According to the discriminant function analysis, 53.0% of the original groups were correct classification into their own populations. The plotting discriminant function exhibited the intermingling in all demographic groups. This morphometric study of Rastrelliger brachysoma indicated that short mackerel in Thai waters: the Gulf of Thailand and the Andaman Sea, had a common ancestor's origin.
