Item type:Publication, Meat characteristics from four different cutting parts of Cherry Valley duck(2018-08-14); The objective of this study was to investigate the duck meat characteristics in 4 main parts: breast, fillet, leg, and thigh. A total of 30 Cherry Valley ducks were used in this study. They were slaughtered at the age of 42 days. Carcasses were cut and collected the boneless and skinless of breast, fillet, leg, and thigh for measuring meat characteristics. The results showed that fillet and leg had the longest sarcomere length at 6, 12, and 24 hour post mortem (P<0.05). The highest pH was from leg and the lowest pH was from breast and fillet (P<0.01). The cooking loss percentage of breast was the highest while the lowest was from leg (P<0.01). Thigh and leg were tougher than breast and fillet. Shear force value negatively correlated with sarcomere length at 24 hour post mortem and with pH but positively correlated with L∗ value. - Some of the metrics are blocked by yourconsent settings
Item type:Publication, Influence of charolais sires and seasons on growth performance and carcass characteristics in crossbred steers(2018-12-01) ;Thiwaratkoon, P.; ;Tuntivisoottikul, K. ;Sitthigripong, R.Chongcharoen, M.The factors of Charolais sires, and fattened seasons on growth performance and carcass characteristics of beef cattle fattened were determined at Pon Yang Kham Livestock Breeding Cooperatives N.S.C. Ltd., Sakhon Nakhon Province, Thailand. Samples were 18 crossbred (Charolais X (Brahman x Thai Native)) steers. They were offsprings of four different sires (S1 to S4), which were 4, 6, 5, and 3 steers from S1 to S4, respectively. Animals were fed ad libitum with fresh grass, concentrate, and rice straw. In addition, the steers received molasses as a supplement after 6 months of fattening period. The data were collected during 8-12 months of fattening time. Weight gain and average daily gain (ADG) were calculated. After the animals were slaughtered, the data of carcass characteristics were collected and analysed. The results showed that the sires did not affect all the growth performance and carcass characteristics, except the trait of lean in kg (P<0.05) and percentage of lean (P=0.09). In general, sire had no effect on growth performance and carcass characteristics except S4 which frozen semen was imported from aboard showed higher amount of lean meat than others. The fattening seasons affected weight gain, ADG, and carcass length (P<0.05). Item type:Publication, The effect of different forms of selenium on fatty acid composition in broiler meat(2018-12-01) ;Hiranon, N.; The effects of selenium (Se) in diets on fatty acid composition, lipid indices, and enzyme indexes for desaturase, elongase, and thioesterase in Pectoralis muscle of broiler chicken were investigated. A total of 360 one-day-old chicks (Arbor Acres) were randomly assigned to 2 treatments with 6 replicates, giving 30 birds per replicate. The birds were fed ad libitum in 3 feed phases of giving 2 dietary treatments comprised 0.3 ppm of inorganic Se from sodium selenite (Na-Se) and 0.3 ppm of organic Se from Zn-L-selenomethionine (Zn-L-SeMet). At 39 days of age, one bird from each treatment was randomly selected and slaughtered. Pectoralis muscles were collected and stored at -40 °C before fatty acid composition analysis. There were not significantly different between organic and inorganic selenium treatment on fatty acid composition, lipid indices, and enzyme indexes (P>0.05). However, the results demonstrated that Zn-L-SeMet had slightly lower I/A (6.7%) while had higher h/H (4.4%) and MUFA (8%) than Na-Se. - Some of the metrics are blocked by yourconsent settings
Item type:Publication, Effect of compensatory growth on performance, carcass composition and plasma IGF-1 in grower finisher pigs(2011-05-01); ;Parr, T.Wiseman, J.A total of 48 female pigs (Large White × Landrace × Duroc cross) were used to determine whether a compensatory feed regime influenced performance, carcass composition and the level of plasma IGF-1. Pigs of initial age 73 days were fed a commercial diet at 0.70 of ad libitum (R) for 40 days followed by a return to ad libitum feeding for a further 42 days. The control group was fed ad libitum (A) throughout. Groups of animals on R and A feed regimes were slaughtered at the end of restriction period (SL1), 2 days after refeeding ad libitum (SL2) to establish the more immediate effects of refeeding on IGF levels, and after 42 days refeeding (SL3; n = 8 for each group). As expected, during the restriction period, average daily live weight gain in all the slaughter groups of R pigs was significantly lower than A pigs (P < 0.01); there was no significant difference in feed conversion ratios. In the re-alimentation period of SL3, R pigs grew 12.9% faster (P = 0.033), indicating compensatory growth. At SL1, there was a trend for carcass weight (P = 0.108) of A pigs to be higher than R pigs, but at SL2 live weight and carcass weight of A pigs were significantly heavier than R pigs (P < 0.05), but not at SL3. For killing-out percentage, there was no difference in SL1. After refeeding for 2 days (SL2) and 42 days (SL3), R pigs had significantly lower killing-out percentage than A pigs (P < 0.05). As a proportion of live weight, R pigs had smaller heart, kidney and liver (P < 0.05) than A pigs at SL1. At SL2, only the kidney was smaller in the restricted group (P < 0.05) and there were no significant differences in SL3. As a proportion of carcass weight, Longissimus dorsi was heavier in the R pigs at SL1 (P = 0.108) and SL2 (P < 0.05), but not at SL3. At SL1, there was a trend for intramuscular fat of A pigs to be higher than R pigs. The plasma IGF-1 level was lower in R pigs than A pigs (P = 0.010) at SL1, and slightly lower at SL2 (P = 0.110), with no significant differences at SL3. Dietary restriction period influenced plasma IGF-1 levels, which returned to the ad libitum group levels when animals were refed, as did live weight and carcass weight. It appears that the internal organs and possibly fat, but not muscles, underwent a compensatory response when animals were refed. Item type:Publication, Paternity testing of crossbred beef cattle with 15 microsatellite markers(2019-01-01) ;Tuntivisoottikul, K.Alleles from only 9 microsatellites were detected as BM1818, BM1824, BM2113, CSSM66, ETH10, ETH225, INRA023, INRA037, and INRA063. The highest number of alleles (23 alleles) was found in CSSM66, while the lowest number (13 alleles) was found in ETH 10. BM1818 had expressed an allele size between 239 to 316 bp, while the smallest sizes, 129 to 179 bp, were detected in BM2113. Twenty-nine pairs of sire-offspring obtained a positive LOD score, whereas B-066 with Carlos-sire obtained a negative LOD score. It meant the 29 pairs of sire-offspring were matched with the pedigree records. These 9 microstellites could be used for paternity testing. - Some of the metrics are blocked by yourconsent settings
Item type:Publication, Effect of dietary organic and inorganic selenium on carcass composition and meat characteristics of broiler chickens(2018-12-01) ;Jamnongtoi, P.; The effects of organic Zn-L-selenomethionine (Zn-L-SeMet) and inorganic sodium selenite (Na-Se) on broiler chickens'carcass composition and meat characteristics were compared. The 360 one-day-old broiler chickens subjected to a 3 phases feeding program with basal diets of corn-soy. The chickens were divided into 2 groups supplemented with 0.3 ppm of Zn-L-SeMet or Na-Se throughout 37 days of raising period. Each treatment consisted of 6 replicated with 30 male broilers. Birds were deprived of feed for 12 h and weighed prior to slaughter. Three birds from each treatment replicate were sacrificed by cervical dislocation before carcass compositions were measured. Breast muscles were collected and then determined meat characteristics. Carcass composition was not affected (P>0.05) by different selenium sources. Chicken fed Zn-L-SeMet had higher cooking loss and lower color of L* value compared to those fed with Na-Se. Shear force value of Zn-L-SeMet was significant lower than Na-Se at 1 day postmortem but the effect of selenium sources was not significant later than at 4 day post mortem. - Some of the metrics are blocked by yourconsent settings
Item type:Publication, Cholesterol content and fatty acid composition in Longissimus dorsi muscle of purebred and crossbred pigs(2018-12-01) ;Smittinun, P.; The fat and cholesterol contents, and fatty acid composition in Longissimus dorsi (LD) muscle differ between purebred and crossbred pigs was determined. Duroc purebred (D, n=10), two-way crossbred (Largewhite x Landrace; LWLR, n = 10), and three-way crossbred [Duroc x (Largewhite x Landrace); DLWLR, n=10] pigs were used in this study. Each group consisted of 2 genders (5 barrows and 5 gilts). All pigs were reared under the same housing and feeding conditions for 6 months until slaughtered at 110 ± 5 kg live weight, following which, LD muscle was collected from the left side of each carcass for subsequent analyses. The results showed that D had higher (P<0.01) fat percentage than LWLR and DLWLR. Neither pig group nor gender affected cholesterol content (P > 0.05). For fatty acid composition, D presented highest concentrations of C14:0, C16:0, C16:1, C18:0, C18:1n9c, C18:2n6c, C18:2n6c, C20:1, SFA (saturated fatty acid), MUFA (monounsaturated fatty acid), and PUFA (polyunsaturated fatty acid) than those recorded in samples obtained from DLWLR and LWLR (P<0.01). DLWLR had significantly higher concentrations of C16:1, C18:1n9c and MUFA (P<0.05), with a tendency of higher concentration of C16:0, C18:0, C18:2n6c, C20:1, SFA, and PUFA than LWLR (P<0.1). The ratio of unsaturated to saturated fatty acid (P/S) was more favorable in LWLR compared with those of D and DLWLR (P<0.01). There was a significant group x gender interaction for the concentration of C23:0 (P<0.05). In Duroc purebred pigs, higher amount of C23:0 was observed in gilts than that in the barrow. However, barrow of DLWLR showed higher C23:0 than the amount recorded in the gilts. Fat percentage positively correlated with the concentrations of C14:0, C16:0, C16:1, C18:0, C18:1n9c, C18:2n6c, C20:1, C23:0, SFA, MUFA, PUFA, and P/S (P <0.01) but negatively correlated with C23:0 (P<0.05). - Some of the metrics are blocked by yourconsent settings
Item type:Publication, Effect of visual marbling levels in pork loins on meat quality and Thai consumer acceptance and purchase intent(2019-01-01) ;Noidad, Sawankamol; ;Suwonsichon, SuntareeObjective: We investigated visual marbling level (VML) influence on pork loin physicochemical traits, consumer palatability responses, VML liking, purchase intent, and their relationships. Methods: For each of five slaughtering dates, at 24h postmortem, nine paired Duroc castrated male boneless Longissimus dorsi (LD) muscles were categorized into low (LM, score 1 to 2, n = 3), medium (MM, score 3 to 4, n = 3), and high (HM, score 5 to 6, n = 3) VML. Meat physicochemical quality traits and consumer responses (n = 389) on palatability and VML liking, and purchase intent were evaluated. The experiment was in randomized complete block design. Analysis of variance, Duncan’s multiple mean comparisons, and correlation coefficients were determined. Results: VML correspond to crude fat (r = 0.91, p<0.01), but both were reversely related to moisture content (r = –0.75 and –0.91, p<0.01, respectively). As VML increased, ash (p<0.05) and protein (p = 0.072) decreased, pH and b* increased (p<0.05), but drip, cooking (p<0.05) and thawing (p = 0.088) losses decreased. Among treatments, muscle fiber diameter, sarcomere length, total and insoluble collagen contents, L*, and a* did not differ (p>0.05). Compared to the others, HM had lower collagen solubility percentage (p<0.05), but similar (p>0.05) WarnerBratzler shear force (WBSF). No differences (p>0.05) were found in juiciness, overall flavor, oiliness, and overall acceptability, but HM was more tender (p<0.05) than the others. Based on VML, consumers preferred MM to HM (p<0.05), while LM was similar to MM and HM (p>0.05). Corresponding to VML preference (r = 0.45, p<0.01), consumers (83%) would (p<0.01) definitely and probably buy MM, over LM (74%), and HM (68%), respectively. Conclusion: Increasing VML in pork LD altered its chemical composition, slightly increased pH, and improved water holding capacity, thereby improving its tenderness acceptability. Marbling might reduce chewing resistance, as lower collagen solubility in HM did not impact tenderness acceptability and WBSF. While HM was rated as most tender, consumers visually preferred and would purchase MM. - Some of the metrics are blocked by yourconsent settings
Item type:Publication, Effect of compensatory growth on forms of glycogen, postmortem proteolysis, and meat quality in pigs(2011-07-01); ;Parr, T.Wiseman, J.The current experiment was designedto examine if a compensatory feed regimen influencedstorage of glycogen forms, activity of proteolytic systems,and meat quality. Female pigs (Large White ×Landrace × Duroc cross) with an initial age of 74 dwere allocated to 6 feeding treatment groups (n = 8 foreach group). Groups then consumed feed ad libitum for40 (A40), 42 (A42), or 82 d (A82). The compensatorygrowth groups were fed 0.70 of ad libitum intake for40 d (R40) followed by refeeding for ad libitum intakefor 2 (R40A2) or 42 d (R40A42). Pigs were slaughteredat the end of the restriction period (SL1), thenafter refeeding for 2 (SL2) and 42 d (SL3). The feedingregimen caused restricted animals at SL2 to havea decreased BW (P = 0.039), with the refed animalsundergoing compensatory growth by SL3 so BW wasnot different (P = 0.829). At SL1 there was a trend forthe R40 pigs to have less intramuscular fat than A40 (P= 0.084). There was a trend for macroglycogen (MG; P= 0.051) and a significant effect for proglycogen (ProG;P = 0.014) to be greater at slaughter in R40 than A40,along with a greater postmortem decline in both MG(P = 0.033) and ProG (P = 0.022) over the first 2 h inR40, which was associated with the R40 having a lowerpH at 24 h postmortem (P = 0.043). After refeeding for2 d (SL2), only MG of R40A2 was greater (P = 0.030)than A42 and had a trend for a greater difference ofdecline at 24 h postmortem (P = 0.091), which was associatedwith lower pH at 24 h (P = 0.012). The datasuggest that the concentrations of ProG are more labileand recovered to the concentrations of pigs fed for adlibitum intake sooner than MG. After full compensationin SL3, there was no difference for MG content (at0 h, P = 0.721; at 2 h, P = 0.987; at 24 h, P = 0.343),ProG content (at 0 h, P = 0.879; at 2 h, P = 0.946;at 24 h, P = 0.459), and muscle pH (at 45 min, P =0.373; at 24 h, P = 0.226). At all slaughter points, therewas no difference in shear force (at SL1, P = 0.101; atSL2, P = 0.420; at SL3, P = 0.167). There were nosignificant effects of the feeding regimen on micro- andmilli-calpain large subunit gene expression (for microcalpainat SL1, P = 0.450; at SL2, P = 0.171; at SL3,P = 0.281; for milli-calpain at SL1, P = 0.666; at SL2,P = 0.123; at SL3, P = 0.617) or the activity of the 2proteolytic enzymes at any of the slaughter dates (formicro-calpain at SL1, P = 0.238; at SL2, P = 0.238; atSL3, P = 0.222; for milli-calpain at SL1, P = 0.296; atSL2, P = 0.230; at SL3, P = 0.615). In R40 there wasa trend (P = 0.070) for greater gene expression of caspase3, whereas in R40A2 the increase was significant(P = 0.009) relative to pigs consuming feed ad libitum.However, gene expression of the E3 ligase, MuRF1, atSL3 was less in R40A42 (P = 0.019). Although compensatorygrowth does appear to influence the expressionof various proteolytic systems, the changes do notappear to be associated with meat quality as measuredby shear force. ©2011 American Society of Animal Science. Item type:Publication, Degradation of troponin-T associated with calpain/ calpastatin genes expression in native Thai beef cattle fed different levels of energy(2018-12-01) ;Nonsee, M.; ; ;Sommart, K.Sazili, A. Q.The influence of dietary energy level on the degradation of troponin-T protein and expression of calpain and calpastatin genes in native Thai cattle was determined. Eighteen steers (at 200 days old and average body weight of 100 ±20 kg) were randomly assigned to 3 dietary treatment groups of different metabolizable energy: Treatment 1 [(8.9 MJ/ kg DM; n=6), Treatment 2 (9.7 MJ/kg DM; n=6) and Treatment 3 (10.5 MJ/kg DM; n=6)]. The diets were in the form of fermented total mixed ration (FTMR). At the end of 520 days of feeding, the steers attained 300 ± 10 kg BW at slaughter. The Longissimus dorsi m. samples collected within 2 d postmortem were further aged for 14 d for the troponin-T degradation immunoblot analysis while, the CAPN1, CAPN2, and CAST genes expression analyses only used samples at 2 d postmortem. The relative bands intensities of intact (37 kDa) and degraded troponin-T (30 kDa) were unaffected by the dietary treatments (p>0.05). Higher 37 kDa (p<0.01) and 30 kDa (p<0.001) troponin-T proteins expression were noted at 2 d and 14 d post-mortem, respectively. The CAPN1, CAPN2, and CAST genes expression remained unaffected (p>0.05) by the dietary treatment. Nonetheless, significant associations were observed between CAPN2 and CAST genes expression (r=0.93; p<0.0001), and between CAPN1 gene expression and 30 kDa troponin-T proteins expression at 14 d postmortem (r=0.58; p<0.05). This study concluded that neither troponin-T proteins nor calpain/ calpastatin genes expression were influenced by dietary energy levels in fattened native Thai cattle. The associations between CAPN2 and CAST genes expression, and between CAPN1 gene expression and 30 kDa troponin-T proteins expression at 14 d postmortem suggest the involvement of CAPN1 in myofibrillar proteolysis during the 14 d postmortem ageing of Longissimus dorsi m. in native Thai cattle.
