    Mass-volume-area properties of frozen Skipjack tuna
    This study investigates the physical properties of Skipjack tuna (Katsuwonus pelamis), including weight, size, volume, apparent density, surface and projected area, and the correlation between these parameters. An analysis of the physical characteristics of the Skipjack tuna suggests that its shape can be broken down into three main sections: the head, the center, and the tail. The central section of Skipjack tuna can be considered a barrel shape with an elliptical cross section, whereas the head and tail can be considered cones with elliptical bases. Linear regression analyses between fish weight and other geometric properties revealed a significant correlation (R2 = 0.74-0.97) to volume, projected area (side and top view), length, width (measured at the thickest part), and perimeter (measured at the thickest part). The results from this systematic analysis could be used in the design of new processes and equipment for Skipjack tuna processing. © 2012 Copyright Taylor and Francis Group, LLC.

    A CFD study on wall shear stress of falling water film on food contact surface
    (2018-08-14)
    Suthanarak, Nawaporn
    ;
    This paper proposes a CFD model to simulate the wall shear stress of the falling water film on the hydrophilic surface (aluminum) of the inclined flat plate in the range of 30°, 60° and 90° at a flow rate of 100, 200 and 300 L/h. Wall shear stress simulated from the CFD using SST k-ω with the VOF model was compared with the real data obtained from the experiment. It was found that both inclined angle and water flow rate had an effect to the wall shear stress and the CFD with the proposed model had the potential to predict it with the maximum averaged error of 2.9%.

    Measuring geometric mean diameter of fruits and vegetables using light sectioning method
    This paper proposes a new technique to measure the geometric mean diameter (GMD) of selected fruits and vegetables calculated from a three-dimensional (3D) image by computer vision system (CVS). From a single view of the image data a linear laser light projects onto the top of the sample through the center in order to mark the measurement points. The planar metrology and the measurement between planes are employed to calculate the width and height of the samples. Homography transformation and cross ratio are the mathematical parameter applied to calibrate the image data to real world distance (in metric system). GMD of sample can be calculated from a single view of the image with this technique. The percentage of error of GMD obtained from CVS compared with GMD measurements using vernier calipers is approximately 0.03-5.14 depending on the shape of the objects. However, it can be concluded that this technique is worthwhile for measuring GMD of symmetrical objects.

    Effects of heat transfer surface temperature on liquid egg yolk fouling
    (2024-01-01) ; ;

    ;
    This study was aimed at investigating the effects of different surface temperatures (60-80°C) on the formation of egg yolk deposits on heat transfer surface. Experimental data from the fouling period were fitted with zero- and first-order reaction models and the reaction kinetics of fouling was obtained using the Arrhenius equation. Egg yolk fouling curves exhibited an asymptotic pattern showing only fouling and post-fouling periods. The fouling resistance at transition point increased with the increasing surface temperature. The zero-order reaction model was well describing the reaction rate of egg yolk fouling. The obtained activation energy of 85.47 kJ/mol was less than that for thermal denaturation of egg yolk proteins. The fouling process of egg yolk was mainly controlled by the deposition reaction.

    Instrumental textural changes in raw white shrimp during iced storage
    (2011-12-01) ;
    Schleining, G.
    The general objective of this work was to evaluate the changes in the texture of raw white shrimp, stored whole in ice for up to 14 days, by instrumental texture analysis of the flesh after peeling off the carapace. Effect of test method (relaxation, compression, texture profile analysis, cutting, and penetration tests), test speed (0.1, 0.5, and 1.0 mm/s), and test position on sample (second, third, and fourth segments of abdominal musculature) were studied to measure the textural attributes of shrimp. Mechanical parameters (force at yield point, stiffness, toughness, and shear/penetration work) increased significantly during the 14 days of storage. Shrimp muscle maintained firm texture up to 4 days of storage after harvesting. At that time, the texture became soft, stiffness of the skin layer increased, and then pH values in the shrimp reached a value higher than 7 (alkaline). A linear model with a high coefficient of determination (R 2 > 0.75, for all parameters obtained from the penetration test with the spherical probe) described adequately the mechanical properties of iced shrimp during storage. Comparing several methods, the penetration test on the second flesh segment using a spherical probe at a speed of 0.1 mm/s and using penetration work as a parameter gave the best results to clearly indicate the changes in textural properties of iced shrimp with a high correlation coefficient during storage time (R 2 = 0.83), while other test methods failed to provide an indication of deterioration. This paper reports the effect of surrounding conditions, e.g. IR radiation through IR window and the reflectivity and temperature of internal surface of chamber on the temperature and emissivity measurement. The results show that the transmission percentage of IR window is about 50 for all IR temperatures, except when the target temperature was the same as the surrounding temperature (T,ur). At this condition (Ts = Tc), the temperature readings were almost the same for all percentage of IR window. The accurate temperature measurement can be achieved by adjustment of the transmission correction in the IR camera or in the software. Considering the effect of materials surface and temperature of chamber, it can be concluded that the surrounding conditions can affect to the accurate emissivity measurement only with the high reflectance object, whereas the high emissivity object has no effect from the surround.

    Optimal Design and Installation of Solar Rooftop for Thai government building
    This research presents an approach for installing grid-connected solar cells on the rooftops of a prototype building in Thailand to offset electricity consumption, aligning with TOU electricity pricing. It includes design methods, energy-saving calculations, and illustrates the savings from solar cell installation over a one-year period, without accounting for solar cell deterioration or system loss charges. The study compares the concept of installing solar cells on the rooftop based on the building's electricity usage characteristics, distinguishing between installing solar cells across the entire rooftop area and according to the building's electricity usage behavior during daytime and working days, ensuring minimal electricity remains while still being sufficient for use. Furthermore, it calculates the comparison before and after installation to provide information for rooftop installation on the prototype building. The research results indicate that installing solar cells across the entire rooftop area can save electricity costs up to 550,000 THB per year.

    Effect of Installation Angle of Ultrasonic Flow Meter on Water Velocity Measurement in Pipe
    (2017-01-01)
    Siriparinyanan, P.
    ;
    ;
    The aim of this paper was to study the effect of installation angle of ultrasonic flow meter on the water velocity measurement in a pipe. The path angles of 45º, 55º, 65º, 75º, and 85ºwere performed in this study. The velocities were estimated by CFD techniques using the realizable k-ε model and measured by a transit time ultrasonic flow meter, and then they are compared with the results obtained from weighing method (ISO 4185). It was found that velocities estimated from CFD flow simulation at various path angles and measured from ultrasonic flow meter had a similar trend. The more difference of path angle away from the recommended specification was set, the more error of velocity measurement was obtained. The velocities at the path angles of 65ºand 85ºwere almost the same because they had an equal difference of path angle from the one that suggested in the specification. The simulated results from CFD had much error than the measured velocities of ultrasonic flow meter, especially at the long distance of path length or at a small path angle. This needed to be compensated with the correction factor.

    Inspection of Heat Seal Packing Bag Integrity Using Thermal Images With YOLO Algorithm
    (2025-01-01) ;

    ;
    This paper presents an inspection of heat seal packing bag integrity using thermal imaging with a deep learning technique. The performance was evaluated by comparing the object detection rates obtained from the YOLOv4-Tiny Algorithm and the Convolutional Neural Network (CNN) technique. Two sets of completely sealed and failure-sealed packaging bags were prepared for the training (100 bags) and testing (100 bags) of the models. Some sample bags containing tomato sauce inserted between the seals represent a failure-sealed condition. The integrity of the heat seal packaging bag was analyzed by examining the differences in color shade patterns of the thermal images. As a result, the YOLOv4-Tiny model achieved a detection accuracy of 98.80%, significantly outperforming the CNN technique, which detected only 78.40%, while using the same dataset; additionally, the time required for detection and training was faster.

    Estimation of the organic film thickness on stainless steel using image intensity
    (2018-08-14)
    Songthai, Maethinee
    ;
    ;
    This research proposes an estimation of thickness of organic film coating on a Stainless Steel surface (SS) and a clear microscope slide using a visible optical method with the image intensity level analysis. Sweetened Condensed Milk (SCM) was used as a representative of the organic film. The uncertainty of inverse calibration equations was evaluated to determine the reliability of this technique. The results showed that the image intensity increased with the increasing of the film thickness in a linear relationship with a high coefficient of determination (R2 > 0.97). Uncertainty of both inverse calibration equations was low and acceptable. It could be concluded that this technique could be used to estimate the thickness of the organic translucent film coating directly on a SS or a clear slide with the limitation of approximately 1.0 mm thickness using the reported linear inverse calibration equations.
